Sushi Tokami 鮨とかみ @ Ginza, Tokyo


Sushi Tokami was one of those sushi shops that I really wanted to go to because of a certain chef named Hiroyuki Sato, who became famous for his extremely tasty red vinegared rice that he uses with his sushi. Unfortunately for me,  it was only after I secured my reservation at Tokami that I found out Sato-san left the shop a few months ago and was in the process of setting up his own Sushi shop, now known as Hakkoku. Nevertheless, I went ahead with my reservation and on that day, I ordered the 12,000 Yen lunch course:

I have to admit, before the meal, I thought to myself "well, Sato-san probably left his legacy behind together with his rice recipe," WRONG! Apparently, the new chef either had his own formula or altered the original recipe. I never got to try Sato-san's rice but according to many high profile instagrammers and bloggers, they've all said the same thing about the current Tokami - the quality now is very inferior to what it was previously when Sato-san was around.

Having said this though, I felt that my lunch was still quite all right. Yeah the food wasn't spectacular but the sushi to me was "good enough" and even some pieces stood out. I also noticed that the sushi size is slightly bigger than the Tokyo average. But the real question is, "would I recommend Tokami?" To a seasoned sushi eater, it's a no. But to those who are looking for a good cost performance michelin starred sushi lunch, I would say this place is really worth a try. 12000 Yen for 18 pieces of sushi made from "premium" fish is considered a great deal.

However, from my point of view, I just couldn't help but feel that whatever I ate just wasn't all that satisfying because from what I taste, the flavor of the rice did not complement the fish all that well. In the words of a blogger who I highly respect, "Tokami has changed a lot, it's not the same without Sato-san".
